Food is not confusing if we stick to the basics - get rid of the white noise of what we should and shouldn't eat.

Once we know the basics, then we can cook with confidence. The more one cooks, the better they'll get. 

For instance, if you know how to make pancakes from scratch, then find a new pancake recipe, perhaps one with a different type of flour, and cook it. Once that's a success, find another pancake recipe and try that, soon you will be a pancake expert! 

Transferred this to any recipe - salads, salad dressings, salsa’s, pizza, tomato sauce etc. and you'll soon be confident in your own kitchen. Creating tasty, healthy meals for family and friends.

To eat well, is to be organized. Menu planning is the way to go. 

Everyone eats and cooks differently and for this reason, it’s best to create your own weekly menu plan. To get you started here's an easy Macaroni and Cheese recipe to try.  After making this you'll never want to buy a box of KD again!

Macaroni and Cheese

Macaroni Cheese

Everyone loves mac and cheese, it’s the absolute comfort food! Serve with a big green salad and carrot sticks.

Serves 6

2 cups dry elbow macaroni
2 tablespoons butter
1/4 cup cooking onion, chopped fine
1 clove garlic, minced
2 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups warm milk (I warm mine up in the microwave)
1 ½ cups cheddar cheese, grated
1/2 cup Parmesan cheese, grated
Pepper, to taste
1/2 cup breadcrumbs

Preheat oven to 350 degrees F° 

Cook macaroni in a pot of boiling salted water until al dente (as per box instructions). Drain and rinse, place in a casserole dish. 

In a small saucepan, melt butter over medium heat. 

Add onions and garlic and sauté until tender, about six minutes. Stir in flour and salt to form a paste. Whisk in warm milk in a steady stream and stir until thickened, about 10 minutes. Add cheeses and stir until melted. Season with pepper. 

Stir cheese sauce into macaroni. Sprinkle breadcrumbs on top. Bake for 30 minutes or until heated through.
