Macaroni Cheese
Everyone loves mac and cheese, it’s the absolute comfort food! Serve with a big green salad and carrot sticks.
Serves 6
2 cups dry elbow macaroni
2 tablespoons butter
1/4 cup cooking onion, chopped fine
1 clove garlic, minced
2 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups warm milk (I warm mine up in the microwave)
1 ½ cups cheddar cheese, grated
1/2 cup Parmesan cheese, grated
Pepper, to taste
1/2 cup breadcrumbs
Directions:
Preheat oven to 350 degrees F°
Cook macaroni in a pot of boiling salted water until al dente (as per box instructions). Drain and rinse, place in a casserole dish.
In a small saucepan, melt butter over medium heat.
Add onions and garlic and sauté until tender, about six minutes. Stir in flour and salt to form a paste. Whisk in warm milk in a steady stream and stir until thickened, about 10 minutes. Add cheeses and stir until melted. Season with pepper.
Stir cheese sauce into macaroni. Sprinkle breadcrumbs on top. Bake for 30 minutes or until heated through.
