What do you do with black bananas? Do you save them forever desperately hoping someone will eat them, while you watch they get blacker and blacker?
Eventually do you throw them out because no one will eat them? (in the composted of course). If this you...next time, try freezing them.
Peel them first, throw them into a freezer bag, date the bag, and put them in your freezer for later. They are great for baking or in smoothies.
If you don't want to freeze them, then make Banana Bread.
Banana Bread
Banana bread is always a favourite. Double the recipe and freeze one loaf.
Makes 1 loaf
½ cup butter
1 cup sugar
2 eggs
3 overripe bananas, mashed
1 ½ cups flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
Preheat oven to 350 degrees F.
Beat butter, sugar and eggs until smooth. Add the bananas. In a separate bowl combine flour, baking soda, salt and baking powder. Spoon dry ingredients into wet and mix. Spoon into loaf pan lined with parchment paper. Bake 50 minutes or until tester comes out clean.
