Lemon Couscous |
This is a super simple dish to serve with the Moroccan stew. It’s good as a rice alternative and also rice served with chicken dishes such as chicken kabobs.
Lemon Couscous
Serves 4
1 cup couscous
1 cup chicken stock, vegetable stock, or water
1 tablespoon olive oil
1/4 teaspoon salt
1 tablespoon fresh lemon juice

Directions:
In a medium-size saucepan, add the stock, olive oil and salt and bring to a boil.
Once boiling, remove from the heat, add couscous and cover. Leave for 5 minutes. Fluff the couscous with a fork and add the lemon juice. Taste, adjusting the lemon and salt.
