Spinach and Basil Pesto is Super Simple To Prepare

Our family is a big fan of pesto. This recipe is slightly different than a traditional pesto recipe because it has fresh spinach, as well as basil. I suggest boiling up a big pot of linguine to serve with this pesto sauce.  Round out the meal with a salad and fresh, crusty French bread.

Spinach and Basil Pesto


1/4 cup pine nuts
1 cup olive oil
2 cups fresh spinach leaves
1 cup basil leaves
1 cup freshly grated Parmesan cheese
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper 

Place all ingredients into a blender and puree until the consistency of thick mayonnaise. Freeze if not using immediately.
