If you're looking for a fast and delicious meal to serve with fish, then try this salmon recipe with pineapple, mango, and salsa.  I cooked the fish in the oven,  but the barbecue works as well. The salsa takes seconds to make and is the star in this meal.

Salmon with Pineapple and Mango Salsa

Serves 4

A fabulous dish to make that's fast and tasty.

Fish

1 1/2 pounds Salmon 
Olive oil
Salt and pepper to taste

Preheat oven to 425 degrees F.
Place fish in a baking dish and rub olive oil on top.  Sprinkle with salt and pepper.

Bake until fish flakes about 12-15 minutes (timing depends on how thick your fish is, it’s usually 10 minutes per inch).  

Serve with Salsa.

Pineapple Mango Salsa

Pineapple and Mango Salsa


1 cup fresh pineapple, diced small 
1 cup mangos, peeled and diced small 
1 red bell pepper, seeded and diced small 
1/2 cupred onion, finely chopped
1/4 cup fresh cilantro, finely chopped
Juice from 1 lime, about 2 tablespoons
1 tomato, diced small 
Pinch of red pepper flakes
Salt and Pepper to taste

Combine all ingredients together in a small bowl.

Serve with fish.
