These little cookies are full of flavour ! With few ingredients, they truly are easy to make. I suggest making them small, because they are rich. I used walnuts, but pecans, hazelnuts or almonds would do as well.

These little cookies are full of flavour ! With few ingredients, they truly are easy to make. I suggest making them small, because they are rich. I used walnuts, but pecans, hazelnuts or almonds would do as well.
Makes 20-30 (depending on their size)
1/2 cup icing sugar (plus extra for rolling)
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 cup finely chopped nuts (almonds, pecans, walnuts or hazelnuts)
Directions:
Preheat oven to 350 degrees F.
In a bowl, cream the butter until smooth. Gradually add in the icing sugar and continue beating until light and fluffy. Beat in the vanilla and then gradually stir in the flour and nuts. Mix until just blended.
Shape each cookie into a small crescent shape.
Place on a baking sheet lined with parchment paper. Bake for 15 minutes or until lightly browned on the bottoms. Cool slightly, remove from pan and roll in icing sugar.
