A delicious treat that’s easy to make and good for the whole family. These tasty bars with seeds, chocolate, cranberries and coconut make a great snack.  They're also great to chomp on after a work-out!

Peanut Butter Bars


1 cup smooth peanut butter

1/2 cup brown sugar
1/2 cup honey
1/3 cup melted butter
2 teaspoons vanilla
3 cups rolled oats
1/2 cup shredded coconut
1/2 cup unsalted sunflower seeds
1/2 cup sweetened dried cranberries
1/4 cup sesame seeds
1/2 cup chocolate chips
1/2 teaspoon salt


Preheat oven to 350 degrees F.  In a large bowl mix peanut butter, sugar, honey, melted butter and vanilla. Mix until smooth.  Stir in oats, coconut, sunflower seeds, dried cranberries, sesame seeds, chocolate chips, and salt.  Mix well.  Pat into a 9 x 13 inch baking pan lined with parchment paper. Bake 25 - 30 minutes until lightly brown.  Let cool before cutting into bars.  Freeze extra.
