Cooking And Exercise Are Similar

Cooking and exercise are similar, they both take time.  Like exercise, home cooking (with fresh whole foods) is also good for our bodies.  The key is to start doing both so they become a habit in our daily lives.  We are all worth the effort and time.  Start small and build on your success.

 Sunday night is a time to plan your week of recipes.  Try to take advantage of the fresh local vegetables that are slowly appearing in the grocery stores.  Why not plan on attending a Farmer’s Market this week? The taste of fresh, local produce will make you a cooking star!

 Tetrazzini Chicken
Serves 4
6 oz dried fettuccine
2 teaspoons oil
1 medium onion, chopped
1 clove garlic, minced
1 cup mushrooms, sliced
1 teaspoon dried basil
2 tablespoons all purpose flour
2 cups chicken stock
1/3 cup cream cheese
2 cups cooked chicken, cubed
Parmesan cheese
Salt and pepper, to taste
Bread crumbs

Preheat oven to 350 degrees F.  Cook fettuccine in boiling salted water until al dente, about 8 minutes.  Drain and rinse under cold water, set aside.  In a large Dutch oven, heat oil over medium high heat.  Add onions and garlic and sauté 5 minutes.  Add mushrooms and sauté 4 minutes.  Add basil and flour.  Stir 1 minute.  Slowly add stock stirring until slightly thickened.  Add cream cheese, fettuccine and cubed chicken.  Season with salt and pepper.  In a separate bowl, combine bread crumbs and Parmesan cheese.  Sprinkle on top and place in oven 15 minutes, or until heated.
